Henry opened his first eatery in New Orleans in 1985. After a successful run in the French Quarter, Henry picked up and moved to Colorado to enjoy the mountains. After a decade of working in food and liquor sales in Denver he became tired of constantly searching for authentic creole food from the Bayou.
